Nyumen (Somen noodle soup)

2 servings
Dried somen noodles 100g (2 bundles)
Onion, sliced 50g
Soup Base 120ml
Water 600ml
Scallions as needed
  1. Cook somen noodles according to the package instructions. Drain and rinse well in cold water and set aside.
  2. Cut scallions diagonally.
  3. Boil (A) and sliced onions in a pot and cook until tender. Drizzle the egg into the soup gently while stirring.
  4. Place (1) and (3) in a bowl and serve. Garnish with scallions (optional).
