Coconut Curry Soup

Ingredients/Serves 2
Chicken thighs, cut into bite-size pieces 200g
Eggplants, diced 160g
Red pepper, diced 70g
Okra, sliced in half diagonally 40g
Onion, chopped 100g
Garlic, chopped 1 clove
Olive oil 1 tbsp
Coconut milk 400ml
Water 300ml
Dashi Soy Sauce 4 tbsp
Curry powder 2 tbsp
Bay leaf 1
  1. Soak diced eggplants in water and pat it dry.
  2. Heat olive oil in the heated pan. and add chopped onion and garlic and sauté until light brown.
  3. Add chicken, eggplants and A.
  4. Simmer for 10 minutes, add red pepper and okra, and cook for few more minutes.
